Tasty Tuesday - A quick and easy meal

Summer always brings busyness for us. We enjoy being out in the evenings when it is cooler & my kids have ball games. So, we are always looking for meals that are quick & easy and don't heat up the kitchen much. One of my kids' favorites is easy chicken quesadillas.

Cooked chicken, cubed
packet of taco seasoning
shredded cheese
soft taco shells

1. I always have cooked chicken that is cubed in the freezer, I pull that out & mix it with taco seasoning according to the package directions.
2. I then place a soft taco shell in a skillet
3. Sprinkle with cheese & chicken
4. Fold & fry it, until cheese is melted & shell is browned on each side. Approx. 2-3 minutes on each side.
5. Serve with sour cream or salsa.

Kids can build this pirate ship this Saturday, June 27th from 10:00 - 11:00 a.m. at your local Lowe's for free.

If you've not yet expierenced a Lowe's Build & Grow Clinic, our family highly recommends them! They are a come & go thing, in our experience, the projects usually take 15-20 minutes to complete. They always have friendly Lowe's workers to help the kids in their projects. The suggested age is 5 & up, however, my son started doing the clinics when he was 3. The projects are simple & give the kids a great sense of accomplishment (and they get to use a hammer!). Not only do the kids get to take home their project, but they also get a kid sized Lowe's apron, safety goggles, and a certificate of completion - all for FREE!

Around the House Organizers

We have tons of stuff that we store or throw away, not sure what to do with it. Or some of us spend money on organizers in the store. There is several things we all have in our house that can be used as great organizers. Here are a few of my ideas, feel free to share what you use!

Tissue Boxes - These work great to store your plastic bags. Also, my kids use these to hold their small bouncy balls.
Toilet Paper Rolls - Use to slip on hairbands.
Velcro roll - we used this to make a place for my daughter to keep all of her ponytail holders.
Photo Albums - Use these to store your reciepts and/or recipes cut out from magazines.
Shoe boxes - can be used to hold all sorts of things! They stack nicely on shelves in closets & cabinets and you can write on the box what is inside.
Ice Cube trays - place these in your top dresser drawer to hold earrings, necklaces, rings, etc.

Tasty Tuesday - Swirled Mint Ice Cream Dessert

Oreo Cookie pie crust

10 oz. swirled semi-sweet chocolate chips

1 Qt. Chocolate Chip mint ice cream

Chocolate syrup

1. Sprinkle one cup chocolate chips into pie crust


2. Spread Ice cream into pie crust, smoothing out with a knife or spatula


3. sprinkle remaining chocolate chips over ice cream & press lightly


4. Place in freezer for 2 hours


5. To serve - let sit for 5 minutes, cut & drizzle cut pieces with chocolate syrup.

You could use any kind of combination of cookies, candies, & ice cream with this recipe! What a delicious summer treat!

Crayola's 3D Sidewalk Chalk is something my kids had wanted to try out, but we were skeptical on if it would really work. Someone at church had told us, they tried it & found it worked. One day at Walmart, we found it for $4, so decided to try it for ourselves & it did work! The kids had a blast with it. I normally would not have spent $4 on some chalk, but the hours my kids spent "checking it out" was well worth the $4!

Tasty Tuesday - Pizza Roll-up

Pizza dough, can also use 1 can refridgerated pizza dough

2 TBS melted butter

1/4 tsp. italian seasoning

1/4 tsp. garlic powder

1 C. shredded Mozzarella cheese

pepperoni

pizza sauce

1. Mix together melted butter, italian seasoning, & garlic powder, set aside


2. roll out pizza dough into an approx. 10x15 rectangle.


3. spread butter mixture onto dough.


4. top with 1/2 C. sauce, mozzarella cheese & pepperoni


5. Bake at 400 degrees for 15 min., until lightly browned.

Variation - Instead of pepperoni & pizza sauce, it is good topped with shaved roasted turkey or chicken!

Tasty Tuesday - Frozen Vanilla Cappuccino

2 cups ice cubes
1½ cups strong coffee, chilled
¼ cup French Vanilla Flavor Liquid Coffee Creamer
3 tablespoons granulated sugar
Ground cinnamon

Place ice, coffee, creamer and sugar in blender; cover. Blend until smooth.
Pour into 2 glasses, sprinkle with cinnamon.
Makes 2 servings
