Tasty Tuesday - Pink Paradise Punch

What a fun drink to make for a special evening with the kids!


1/3 cup Cherry KOOL-AID sugar sweetened or sugar free mix
1/3 cup Tropical Punch KOOL-AID mix sugar sweetened or sugar free
1-1/2 qt. (6 cups) cold water
1 pt. (2 cups) vanilla ice cream, softened
1 bottle (1 liter) carbonated lemon-lime beverage, chilled

1. Put drink mixes in bowl, add water. Stir until mixes are dissolved
2. Add softened ice cream, stir until melted
3. Place in refridgerator until ready to serve.
4. Stir in carbonated beverage just before serving.

Tasty Tuesday - Ice Cream Cupcakes

What a fun summer treat! These are especially fun for birthday parties! The recipe can be varied for a variety of tastes.

10 oz. frozen pound cake
3/4 C. Heavy Cream
1/2 C. confectioners' sugar
2 pints coffee ice cream, slightly softened
1 C. chocolate covered toffee bits, such as Heath Bar

1. Place cupcake liners in a muffin tin.
2. Cut pound cake into 1/2 inch thick slices & use a cutter to cut out circles. Place into bottom of liners
3. Combine Heavy Cream & confectioners' sugar in a bowl & whip with a mixer until cream holds stiff peaks.
4. Scoop ice cream into a large bowl. Take out 1/4 C. Heath Bar bits & add remaining bits to ice cream. Use a large spoon to mash bits into ice cream.
5. Place 1 scoop of ice cream onto pound cake & top with whipped cream. Sprinkle remaining Heath Bar bits over top.
6. Place plastic wrap over the top, loosely & freeze for 2 hours.
7. These are good in the freezer for 3 days.

Tasty Tuesday - a low fat Spinach Dip

I've not had this recipe yet, but for only 30 calories a serving for a dip, I'm definatly going to give it a try. I know so many of us are trying to eat healthier these days, so thought I'd go ahead & share this recipe.

1 cup nonfat plain yogurt
1/2 cup chopped cooked (or frozen and thawed) spinach, well drained and squeezed dry
1/2 cup drained canned water chestnuts, chopped
1/4 cup chopped sweet white onion
Garlic powder
Salt
Ground black pepper

1. In a serving dish, stir together yogurt, spinach, water chestnuts, and onion.
2. Season to taste with garlic powder, salt, and pepper.
3. Cover and refrigerate at least 30 minutes.

Serves 8

Serving Size - 1/2 Cup

Per serving: 30 calories, 2 g protein, 5 g carbohydrate, 0 g fat, 0 mg cholesterol, 0 g fiber, 35 mg sodium
